Spanish Bean & Sausage Soup


  • 2 tablespoons olive oil
  • 1 leek, diced
  • One yellow onion diced
  • 2 teaspoons dried thyme or 4 teaspoons fresh
  • 2 Spanish chorizo sausage or linguica
  • 2 cloves garlic diced
  • 4 cups chicken stock
  • 2 zucchinis diced
  • 2 cups cooked navy beans
  • 2 cups crushed or canned tomatoes


  1. In a pan heat the oil
  2. Add leek, thyme and onion until translucent
  3. And chopped sausage
  4. Add two cloves of garlic sauté until fragrant about three minutes
  5. Add stock and bring to a simmer for 10 minutes
  6. Then the Zucchini and simmer for another 10 minutes
  7. Add tomato and simmer for another five minutes
  8. Serve with olive-oil toasted baguette sliced on the bias
