Ingredients
- 2 tablespoons olive oil
- 1 leek, diced
- One yellow onion diced
- 2 teaspoons dried thyme or 4 teaspoons fresh
- 2 Spanish chorizo sausage or linguica
- 2 cloves garlic diced
- 4 cups chicken stock
- 2 zucchinis diced
- 2 cups cooked navy beans
- 2 cups crushed or canned tomatoes
Directions
- In a pan heat the oil
- Add leek, thyme and onion until translucent
- And chopped sausage
- Add two cloves of garlic sauté until fragrant about three minutes
- Add stock and bring to a simmer for 10 minutes
- Then the Zucchini and simmer for another 10 minutes
- Add tomato and simmer for another five minutes
- Add cooked beans, allow to heat-through.
- Serve in bow, with side of olive-oil toasted baguette sliced on the bias
